Easy, Breezy, Beautiful, Broccoli and Cheese Casserole

I’m EMBARRASSED to say I used to eat two scrambled eggs and a spoonful of peanut butter for dinner. Sometimes, I would even get a bit spicy and microwave a frozen meal. Cooking never mattered to me. Seemed to be like a waste of time. Why make something when I could buy something premade?

Here’s a few reasons. First off, that’s essssspeeensive. Girly pop, you’re just paying for convenience!! Absolutely not. Second of all, that crap is atrociously unhealthy. For the love of all things, but at least a little bit of nutrition in your body. Just a little bit. Maybe even a ~vegetable~. Last, but not least, you’re going to end up marrying a cook. A talented cook. The fact that he wins you over with baked goods should be a sign to GET OFF YOUR LAZY BUTT AND COOK SOMETHING!

That applies to you (my friend reading this) as well. Get it together. Today at The Brunch Table, we’re talking about this SCRUMPTIOUS dinner I made last night. The husband even went for seconds. That’s how ya know the dinner compliment wasn’t fake. HERE’S WHAT’S FOR DINNER BABYYYY:



Broccoli Cheese Casserole. It’s scrumptious. I’m not a casserole person, but this is the perfect mix of salty, savory, crunch, and smooth. Bear with me.


Gather the ingredients:



  • 3-4 crowns broccoli (they always say to use fresh, but who cares. Use that frozen broccoli in the back of the freezer, babe. I swear it’s still good)

  • 1 cup mayonnaise

  • 1 can cream of chicken soup

  • 4 tablespoons butter, melted

  • ¼ cup diced white onion

  • 2 eggs

  • 1 teaspoon salt (or 2, or 3….)

  • ¼ teaspoon pepper

  • 1 ½ cup sharp cheddar cheese (or whatever cheese ya got)

  • 1 sleeve Ritz crackers, crushed

LET’S DO THIS THANG:

Preheat the oven to 350. Grease a 9 x 13 baking pan. Generously. Cheesy = hard to clean.

Chop chop chop the broccoli crowns into bite size pieces. Boil until soft.

Spread broccoli evenly along the bottom of the casserole pan.

In a mixing bowl, pour melted butter, mayonnaise, cream of chicken soup, and diced white onion and mix.

Add in both eggs, cheese, seasonings, and mix that thang up again.

Spread that ish over the broccoli in the pan. Evenly coat.

Cover everything with crushed Ritz crackers.

Bake for 30-40 minutes.

EAT UP GIRLY POP. THIS IS A YUMMY SIDE DISH. ENJOY!!!
